Similarly, today we are providing you the recipe of making gundruk, a popular Nepali food provided by an Indian celebrity chef Kunal Kapur.
Gundruk is made by fermenting leaves especially mustard leaves or radish leaves and then drying them to make various dishes which is a popular traditional food in Nepal. Gundruk is used to make Gundruk soup, Gundruk pickle and even mixed with other vegetables. In olden times gundruk was prepared by wrapping mustard or radish leaves in fig or banana leaves and kept in pits covered with soil.
To make gundruk first we need green leaves of radish, mustard or any other green vegetables. Then dry it in sun for 4-5 hours or a day and pound the steam of the leaves. Then, adding hot boiled water in the pounded green leaves. After keeping it for while in hot water squeeze all the water from the leaves and pack them in a tight container with a tight lid or use polythene if you don't have container as shown in the video.
Keep it for 10- 15 days till it gets smell of gundruk or if it's in polythene them it's too quicker as it takes only 5 days to get ready gundruk or the leaves get totally fermented. And then taking it out from the container or polythene, dry it in the sun for few days. and you will get your gundruk ready.
